Probably more the time the iron is on the joint than out and out temp, use a good powerful temp controlled iron and set the temp to what works well with the solder and wire you are using.

I have a temp control iron but it's old and I'm using 60/40 wire.I just don't want to hurt this board and I'm using 14 gauge wire so I have to hold it on there too get it to flow

Tin the wire first and get it hot/wet just above the pad then push it on to the pad with the iron and feed a little fresh solder and you can get it on quickly.

I always solder temperature sensitive items with as chunky of a tip as will fit in the space I am soldering, and my iron all the way up to 480. Hot and fast, so the solder points heat up fast instead of the rest of the item.
